PENGARUH METODE BIOTEKNOLOGI FERMENTASI KOMBUCHA BUNGA TELANG (Clitoria ternatea L) SEBAGAI PENURUN KADAR KOLESTEROL BEBEK PEDAGING BERDASARKAN KONSENTRASI GULA AREN YANG BERBEDA-BEDA

Hiperkolesteromia merupakan salah satu penyakit yang dapat menyebabkan berbagai komplikasi kesehatan manusia. Salah satu faktor pemicu terjadinya kadar kolesterol tinggi berupa rutinnya dalam mengkonsumsi protein hewani. Daging bebek adalah salah satu sumber protein hewani yang memiliki kadar kolesterol tinggi. Penelitian ini bertujuan untuk memperoleh daging bebek yang rendah kolesterol. Penelitian ini menggunakan bebek pedaging sebanyak 20 ekor dengan usia 3 bulan yang diberi perlakuan kombucha bunga telang dengan konsentrasi gula aren yang berbeda-beda sebagai substratnya dan telah difermentasi selama 14 hari suhu 260C. Pada penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) dengan menggunakan 4 perlakuan (selama 1 bulan atau 4 minggu) dan dilakukan sebanyak 5 kali pengulangan. Komposisi perlakuan sebagai berikut : P0 = kontrol, tanpa kandungan kombucha bunga telang dan konsentrasi gula aren, P1 = air minum + 20% gula aren kombucha bunga telang, P2 = air minum + 30% gula aren kombucha bunga telang, P3 = air minum + 40% gula aren kombucha bunga telang. Parameter yang diukur dalam penelitian ini diantaranya adalah kadar kolesterol, bobot tubuh, dan konsumsi air minum. Data yang dihasilkan dianalisis menggunakan ANOVA dan dilanjutkan dengan uji Duncan dengan taraf kepercayaan 95%. Hasil penelitian menunjukkan bahwa pemberian kombucha bunga telang dengan substrat gula aren berpotensi dalam menurunkan kadar kolesterol pada bebek pedaging secara nyata.
